Concerning PRO theme: I’ve messed around with a lot of the options, and I’ve learned a lot. Now I’d like to start fresh. Is this possible?

We can just unassigned those headers and footers and then delete it. Then feel free to create new headers and footers. Regarding theme options, default stack is Integrity. For more guidance check our knowledge base:
