im struggling to understand how they changed the colores at the navigation bar & how they did the settings on the logo + nagigation bar that on mobile the show up or not.

To change the color of navigation bar, please follow below steps:
- Inspect the navigation element and under Top Links > Primary Text style > Text color select the color. If you wish to change the hover color, make the necessary selection in Interaction.
- If you wish to change the sub menu color, Sub Links > Primary Text style and repeat the above step.
For this you can use Hide During Breakpoints feature under Customize > Setup of individual elements. To learn more, please take a look at following resource:
