What is the best way to setup a podcast using Pro X, I saw Essential Grid, but I wanted to check with you all first before I started?

You may use a 3rd party podcasting plugin for better podcast management. One of the plugins here can help: https://wordpress.org/plugins/search/podcast/
You can then make use of the Essential Grid in displaying your podcast. To know more about this plugin, please check this out: https://theme.co/apex/forum/t/extension-essential-grid/68
You can install Essential Grid by going to Pro > Validation > Extensions and find the plugin to install.
