How do I quit the demo I’ve been trying to work with and start from scratch again? I was hoping I could alter a demo, but that’s not working out. Thank you for your help.

You need to delete pages, posts and portfolio manually from your wordpress dashboard then add &x-clean-demo-content-cache to your url to clean demo cache then load your demo content again.
