Slides, should I use Soliloquy, Revolution or LayerSlide?
Portfolio, should I use Grid, Envira or Essencial Grid?

Thank you for writing in, personally I would recommend Revolution Slider and Essential Grid extensions, not only its flexible but its documented very well.
