Where do I find the Header Builder? When I press Launch I can only choose between Options, templates and content.

Sounds like you’re using X and not Pro. The header and footer builders are only available in Pro. You might want to switch to Pro.

Your website whattodo.dk shows X theme(currently active), Looks like you haven’t uploaded PRO theme via FTP after the upgrade. Please follow the article for more info : https://theme.co/apex/forum/t/x-to-pro-conversion/104
As with any upgrade you should first test the process on a staging/development environment and not your live site.
