Hello, I am trying to add email address encryption to my Pro site (for antispam purposes). I tried installing the plugin WP Mailto Links. Under the Protect Plain emails option, the default Protect plain emails with the protection text option makes my header open mail to ”Protected email”, and the Convert plain emails to mailto links option completely ruins the email icon. Keep plain emails as they are let’s my header icon work, but this seems to defeat the point of the plugin. Does anyone have any experience with this plugin? Or maybe a similar plugin that works better with Pro?

I am not sure about the plugin. We do not have experience regarding the obfuscation of the mailto links and can not give you informed suggestions.
I did a Google Search and found out an article that might be of a help adding the functionality yourself manually:

But in general this is not a thing that we support out of the box and you may need to consider hiring a developer to implement the feature for you.
