When importing the demo does no content(images, text etc) come along with it?

This makes it extremely difficult to edit, and makes it pretty frustrating to be honest.

Am I missing something?

If you are importing standard demo content then you will get the home page layout and some placeholder content and theme options. On the other hand Extended Demo will give you full blown ready website. To learn more about demo content, please take a look at following article.
