To find out, go to your Licenses page https://theme.co/apex/licenses under Product title you’ll see the conversion option for X licenses, simply click on the label to do so. To learn more please see:

does pro allow you to have both a staging and production license like standard X?

Absolutely. Just like X, you can have a staging and production URL for each Pro license.
