Centering header text

When you stretch the screen to replicate devices and screen sizes, the text has a hug gap up top, I want it to act like this:

so no matter what screen size or device, that text is always centered.

Looks like I have to use layer slider correct? SO im building it using layer slider, my issue is now this:

I have c.knights steakhouse up top, the the tagline underneath.

They are both centered top and bottom 50% to center it always. The tagline has a padding of 100PX on the top.

Looks good on the desktop, but mobile, it all bunches and covers each other. How can I fix this?

You can use hide base on there screen size function to create for mobile version only. You can check the link below on how to do it.

This doesnt really help, Why is the text behaving like that? I have padding at the bottom of the top text, so why is it not working on a mobile view?
