Wouldn’t it be nice to just do this graphically somewhere?
Is that possible? Am I missing where this is in the X interface?

Thank you for writing in, unfortunately, you can’t change the default breakpoints because those are part of the core of the Theme, but you can utilize the Hide During Breakpoints feature and control the visibility of the section or each element.
