1. How can I insert a full-width video like in ethos 3?
2. In Ethos 3, the menu-bar scrolls with the page. Is it possible (and if so how?) to make it stop and remain in view when it reaches the top of the page?

Please navigate to Theme Options > Header > NAVBAR > NAVBAR POSITION > select Fixed Top:
